Swai Tacos with Homemade Cabbage Slaw and Plantains
I’m on a big plantain kick and I really enjoy Swai. I cooked this up in a skillet with 1 Tbsp. of olive oil and Pollo Asada seasoning. Swai is super mild and doesn’t really have any of the fishy taste. I used 4 corn tortillas, split up a cheese stick and melted that on top. The cabbage was made by chopping jalapenos, tomatoes, red onion, and angel hair cabbage and pouring white wine vinegar and lime juice over it so it can soak. I cook my plantains in my cast iron skillet and if they’re not quite ripe, I will microwave them first and cook them in a little water.
