Chickpea Mac-n-Cheese
I made Banza Chickpea Mac-n-cheese. I got the larger box with the cheese sauce. To spice this up, I added 12 oz of chicken breast/thigh from my Costco Rot. Chicken and about 2 cups of broccoli that I roasted in the air fryer with garlic salt. To further boost the protein, I added about 1-1.3 C of low fat cottage cheese, 3 individual Tillamook cheese packs, and a tiny bit of Fairlife milk to make the cheese sauce. I combined the cottage cheese, Tillamook, Fairlife, and the bag of cheese sauce and melted all the curds from the cottage cheese before dumping it all over the noodles and chicken.
