Spicy Italian Sausage and Potato Soup

Are you ready for fall? This soup is a favorite of mine and is so easy to make. Brown the sausage and carmelize the onion then you’ll dump everything into one big pot! and let simmer until your potato is soft. You can add red lentils to this for a fiber boost. If adding lentils, increase the amount of broth. Want something lighter? Use chicken sausage (you can add red pepper flakes to up the heat) and use skim milk or almond milk instead of half and half. One note about plant milk - they will not freeze as well and will become chunky when thawed, but this doesn’t impact the taste. This soup is easily frozen and transports well.

Ingredients:

  • 1 pound spicy Italian sausage

  • 1 bunch curly kale (chop and put in at the end)

  • 4 cups chicken broth or bone broth

  • 1 white potato

  • 1 sweet potato

  • 1 white onion

  • Minced garlic to taste

  • 1/2 cup half and half (dump in at the end)
